This quick & easy recipe can be made with just a few key ingredients and a few simple steps.
Teese shows its saucier side in this dish and is a very nice way to eat your brussel sprouts!
We begin by preparing 2 cups of dry macaroni. Fully cook the pasta (DO NOT make it ‘al dente’).
While the macaroni is boiling, we mix the following in a blender until smooth:
Blend this mixture until smooth. Put the sauce into a pot. Stir in the shredded brussel sprouts. Over medium-high heat, stir constantly until the sauce comes to a boil. Cook 2 minutes at a boil while stirring.
Remove the sauce from the heat and add the cooked and drained pasta (should be about 4 cups of cooked pasta). Stir it into the sauce completely. Finally, add the spinach (we held off on adding this so it won’t get too mushy).
Put the whole mixture into a 1.5Qt Casserole dish. Create a top layer of crushed vegan Golden Rounds crackers. I also put halved Golden Rounds around the top edge to form a border.
Put the whole thing under the broiler for 1 minute to toast the cracker topping (not much longer or it will burn).
Pull out of the oven and allow to cool a bit before serving.
